Shibata Kotetsu slicer part2 “Excellent edge stability = Easy edge maintenance”

Shibata Kotetsu slicer part2 “Excellent edge stability = Easy edge maintenance” Showing excellent edge stability of this knife.
It can be maintained by leather strop for quite a bit of time.
(Yes, eventually you'll have to sharpen on the stone,
but it won't be a time consuming job, due to the
edge geometry of this knife.)

I intentionally avoided using the word
“edge retention”, because so many people
misunderstand / misuse this word.

And because of so much
totally meaningless “edge retention test” video
on youtube,
I didn’t want to use the word in this video.

I strongly recommend NOT to use
diamond sharpener on his (Shibata
Takayuki’s) knife.

I also strongly recommend,
while sharpening on the stone, NOT to
rock your wrist (to make convex edge)
like one of the very popular youtube
knife channel tells you to do so.
Don’t.

You’ll end up ruining this excellent edge.
